grape, hand-picked in small bins. In the wine-making process, we
recreate the ancient technique of the “foot crushing”: one half of
the grape is crushed; while the other half is only destemmed in
order to add fragrance to the wine and rediscover the old-style
flavours. Wine obtained from spontaneous fermentation (indigenous
yeasts), not fined. Maturation: cement.
